WHOLE FILLET OF BEEF

Just about everyone would agree that Fillet steak is probably the finest cut of beef available. That’s why other butchers and restaurants charge so much for it.

Our whole fillet is supplied completely un-touched, so you can decide how thick you would like your steak or maybe you’d like to make a beef wellington.

 

Small Fillet:            Ideal for cooking a small beef wellington or similar dish.                                               £14.00 per Kilo  (Av 1 Kilo)

Medium Fillet:        Ideal for cutting into steaks and using for a medium sized wellington.                         £16.00 per Kilo  (Av 2 Kilo's)

Large Fillet:            This is the one to cut your own steaks from or roast as a complete fillet.                    £20.00 per Kilo    (Av 3 Kilo's)

RIB EYE

The chef's favourite. Allow 200-250g per head to allow for trimming. This cut used to be quite cheap, but is now creeping up in price. It has an open-fibre texture and a marbling of creamy fat. Cook with the surrounding fat still attached, then remove after cooking, if you prefer. The fat adds flavour as well as basting the meat during cooking.

Thick and juicy, one of my favourite steaks, lovely with a bit of mustard and some thick chips.

SIRLOIN STEAKS

Another one for the BBQ or griddle.  It taste's fantastic when cooked and the inside is still nice, pink and succulent.

T- BONE STEAKS

Generally 350-400g each, including bone. It has a good marbling of fat with a layer of creamy fat on one side - this should be left on for cooking, then removed if you like. You get about 200-250g of meat, with a sirloin on one side of the bone and a fillet on the other. You also get some marrow in the bone which can be spread on the cooked meat.

TOP SIDE of BEEF JOINT

Topside and top rump are very lean cuts of beef for slow roasting, Either is best served rare or medium rare carved into large, thin slices, something easy to do as there are no bones.

Fore Rib Joint of Beef/Bone in rib joint

When it comes to roasting beef, I find only one cut will do these days, and is has to be rib. We can argue over whereabouts on the cow it comes from, but the combination of flavour and texture you get from this joint just leaves everything else in the shade. And it must be on the bone. Most people agree it has more flavour, and what else are you going to make your stock out of (you do make your own stock now don't you?

DICED BEEF

Diced beef can be used to embellish a variety of recipes, from casseroles to salads. It can be served hot or cold, depending on the dish. The beef used might be purchased specifically for the diced beef
